Our Story
The Mississippi Delta hot tamale is one of the most undocumented African American food traditions in the country. Born from the hands of Black laborers in the cotton fields of the Delta, this food traveled north on the Great Migration — through Chicago, Detroit, New York, and beyond.
Our family has been making them the same way for three generations. Cornmeal masa, seasoned beef, hand-rolled in corn husks, and simmered low and slow in a broth so good we named it The Juice.

Every Delta tamale house has a broth. Ours is The Juice — a slow-simmered, seasoned cooking liquid that our tamales bathe in from the moment they're rolled until the moment they're served.
We don't just cook tamales in water. The Juice is a recipe unto itself, built over hours, layered with spice and tradition. You can order it solo. Most people do, eventually.
